Frugal Gourmet Guacamole RecipeLast week the grocery store had avocados on sale. I picked up a few to eat for our New Year’s celebration but I forget to put them out that evening. They were getting really soft today, so I mixed them up into a batch of guacamole. They’ll make a fine addition to this evening’s taco night.

There are two lines of though on guacamole: chunky or creamy. Much like peanut butter, fans are firmly divided between the two. I prefer the creamy, as it’s easier to dip so my guacamole recipe is an adaptation of a recipe I got out of an old Frugal Gourmet cookbook. Remember Jeff Smith of the Frugal Gourmet fame? He was big way back in the 1980’s, but we won’t go there. His recipes still stand the test of time, so I’m offering my version of this classic after the break:

Guacamole
(adapted from the Frugal Gourmet)

2-3 Haas Avocados, soft
2 tbsp medium salsa
1 small bunch green onions, chopped
1 tbsp lemon juice (or lime juice)
1/2 tbsp ground cumin
1 tsp kosher salt

Peel avocados and remove pits. Place all ingredients into the work bowl of food processor. Pulse 4-5 times and then process for 10-15 seconds or until desired consistency is reached. Let sit for an hour or more for the flavors to meld.

If you don’t have a food processor, you can mash and mix ingredients in a bowl.
